    Easy Loaded Potato Veggie Soup (Kid Approved)

    One of the best compliments I think I’ve ever received came from my ten year old after she took a bite… “Mom! This is delicious! You should open a restaurant and call it ‘Mommy’s Soup Kitchen’ and serve soups just like this!” She doesn’t know I secretly would love to open a little cafe with hearty and healthy soups, gourmet sandwiches, and all kinds of coffee and desserts. But that dream exhausts me to the core thinking about it.     Thai Peanut Zoodle Bowl

    I’ve been on a cooking kick lately. Not just the same old staples.  But adding in a lot of variety and yummy, exotic flavors too.  And all in less than 30 min.  Ain’t nobody got time for being in the kitchen all day. Last week I was craving curry.  So I made a yummy chicken curry chickpea cauliflower stew. It was heavenly and Anniston, my 5 year old, loved it too. Yesterday I meal prepped zucchini, toasted quinoa, and tomato egg muffins for breakfasts for the week. They have not disappointed.     On Sunday’s we crockpot.  Football, crisp autumn air, crunching in the leaves, wearing scarves, eating soups and stews out of cold weather bowls and getting that warm, fuzzy feeling.   This meal was created by total happenstance.  I wanted a crockpot dinner but didn’t have a plan so I worked with what I had.  And it worked.  My husbands words:  “Oh this is good. It’s not to tomatoey.     Sloppy Joe Stuffed Sweet Potatoes

    There comes a moment when I’m putting together a recipe when I pause and close my eyes and imagine how it’s going to taste when it’s complete.  Not too often do they come out EXACTLY as my tastebuds had envisioned but this was one of those recipes that did.  If I could pick a food to live on for the rest of my life, sweet potatoes might just be it.  Punctured with a fork, wrapped in foil, and baked at 400* for 45 minutes and I’m in potato heaven.  I love carbs, but I digress.  This turkey sloppy joe meat could be served on whole grain rolls as a sandwich,…
