    Thai Peanut Zoodle Bowl

    I’ve been on a cooking kick lately. Not just the same old staples.  But adding in a lot of variety and yummy, exotic flavors too.  And all in less than 30 min.  Ain’t nobody got time for being in the kitchen all day. Last week I was craving curry.  So I made a yummy chicken curry chickpea cauliflower stew. It was heavenly and Anniston, my 5 year old, loved it too. Yesterday I meal prepped zucchini, toasted quinoa, and tomato egg muffins for breakfasts for the week. They have not disappointed.     As a parent you’re always trying to stuff something into food for your kids to eat it.  Disguising muffins as cupcakes but packing them with carrots and zucchini.  Adding flaxseed to oatmeal. Blending up extra veggies into a pizza sauce or even making cauliflower nuggets!  All things I’ve tried and have been successful with when it comes to what my kids eat!  Fortunately I have kids who love their veggies but we’re hard up to get them to eat proteins.  So shredded chicken stuffed into these peppers was a hit for us!  I love them with quinoa, my husband is a brown rice fan.  The girls ate both 🙂  …

    Taco Tuesday!  I wanted to switch it up tonight and try something different.     Ohhhhhhhh the aroma that comes from the kitchen when I make this stew is enough to make the neighbors mouths water!  And any meal that’s out of the “norm” that my kids try and actually eat a few bites of is a win.  The husband loved it and I knew he would.  Meat.  Everything in one bowl.  No rabbit food.  Win!  This is hands down one of my favorite 21 Day Fix & Fix Extreme recipes!     Ingredients;  1 lb lean (trimmed) beef stew meat 1 medium butternut squash (chopped into 1/2-1″ cubes) 1 cup low sodium beef broth (can use water and 1 tsp low sodium beef bouillon)…

    Ohhhhhhhh do we love fajitas in our house!  I’ve tried them every which way but I always come back to the “old faithful” crockpot fajitas.  These are super simple, clean, and low carb too!  And always leave us full and satisfied!
