    Thai Peanut Zoodle Bowl

    I’ve been on a cooking kick lately. Not just the same old staples.  But adding in a lot of variety and yummy, exotic flavors too.  And all in less than 30 min.  Ain’t nobody got time for being in the kitchen all day. Last week I was craving curry.  So I made a yummy chicken curry chickpea cauliflower stew. It was heavenly and Anniston, my 5 year old, loved it too. Yesterday I meal prepped zucchini, toasted quinoa, and tomato egg muffins for breakfasts for the week. They have not disappointed.     As a parent you’re always trying to stuff something into food for your kids to eat it.  Disguising muffins as cupcakes but packing them with carrots and zucchini.  Adding flaxseed to oatmeal. Blending up extra veggies into a pizza sauce or even making cauliflower nuggets!  All things I’ve tried and have been successful with when it comes to what my kids eat!  Fortunately I have kids who love their veggies but we’re hard up to get them to eat proteins.  So shredded chicken stuffed into these peppers was a hit for us!  I love them with quinoa, my husband is a brown rice fan.  The girls ate both 🙂  …

    Taco Tuesday!  I wanted to switch it up tonight and try something different.     Ohhhhhhhh do we love fajitas in our house!  I’ve tried them every which way but I always come back to the “old faithful” crockpot fajitas.  These are super simple, clean, and low carb too!  And always leave us full and satisfied! Add caption Ingredients:  3 large chicken breasts, thawed 1 large green pepper, sliced 5-6 sweet mini peppers, sliced 1/4 onion, sliced (optional)  1 tbsp chili powder 1 tbsp cumin 1/2 tsp sea salt 1/4 tsp chipotle chili seasoning Juice of 1 lime Romaine lettuce leaves  Lowfat shredded cheese or Plain lowfat Greek yogurt Salsa  Cooked brown rice (optional)  Instructions:   Thaw chicken and place in bottom of sprayed crock…
