Pumpkin Spice Waffles
With three kids with different preferences, I have learned that if I give into everyone’s requests I’d be a short order cook with an even shorter temper! So when one kid asks for waffles, and one kid asks for muffins, I make one big batch and put some in muffin tins and some in the waffle maker. Then everyone’s happy! We live about 2 hours from my in-laws. When the weather gets cold we can count on heading that way at least one weekend each month. Hunting season starts. On Sunday’s we crockpot. Football, crisp autumn air, crunching in the leaves, wearing scarves, eating soups and stews out of cold weather bowls and getting that warm, fuzzy feeling. Because once September hits, the pumpkin spice is flowing like the Budweiser beers during Cardinals playoffs (another reason why I love this time of year!). So contrary to my husband who wanted to stick to the artificial stuff, I wanted to recreate that PSL flavor without the added sugar, artificial flavors, or food dyes.
