Skinny Strawberry Jalapeño Margarita
Happy Cinco de Mayo! This momma had a long day and was thirsty for something sweet but margaritas always give me reflux because of the sugar. This turned out excellent. Super fresh. Not too sweet with a little kick! The former bartender in me still gets the itch and I come up with some pretty tasty concoctions from time to time! Hope you all enjoy! Cheers! Ingredients: Fresh sliced strawberries Freshly cut limes Diced jalapeño Agave Nectar Premium Tequila (I use Patron Silver) Crushed tortilla chips for the rim Directions: In a shaker, add 1/4 c strawberries, 1 tsp agave nectar, 1/2 to 1 tsp diced…

Sautéed Kale and Tempeh Salad
We challenge ourselves to do a meatless Monday in this house because it gets us out of our grilled chicken and ground turkey comfort zone. Sometimes I get that “look” from my husband. The look where I put his plate in front of him and he looks at me with that head cocked suspicious puppy look- like “what are you trying to get me to eat”? Well. For a man who grew up his whole life hunting and eating wild game, I’m pretty impressed when he tries what I make, even if it goes against his caveman ways! Kale and tempeh sautée was one that I didn’t expect him to…

Mediterranean Chicken Flatbread Pizza
If your “diet” or meal plan doesn’t call allow for pizza, you’re doing it wrong. When I start a new fitness program, when we meal prep, when we do a lot of what we do, it involves pizza. And if it can’t- well, that doesn’t make for a happy mommy! Tonight, this momma is studying and I needed an easy dinner that would fill me up. I whipped this up in minutes and baked it for 13 and voila! Daddy took the three crazy kids to the mall playground to burn some energy and scream somewhere else and this momma cracked open an ice cold La Croix, and ate…

Lentil Stew (Crockpot)
No meat Friday! Lenten season for us. That means no chicken, beef, pork, turkey, etc. Fish is fine. But a husband who isn’t a big fan of seafood, my options can get pretty limited. I’ve been playing around with lentil recipes and this is my new favorite! Husband approved too! I hope you enjoy! Ingredients: 1 cup red lentils 4 c organic vegetable broth 3 celery ribs, diced 1.5 c diced carrots 1/4 c chopped yellow onion 2 garlic cloves, minced 1/2 tsp sea salt 2 tsp oregano 1 bay leaf Black pepper to taste 4 tbsp low fat Greek yogurt (optional) Directions: In a medium crockpot (sprayed with…

Buffalo Chicken Bites (Healthier Version)
Put out the buffalo chicken beacon and I’ll be the first one there! And I feel like Super Bowl is one of the best days for all things buffalo chicken. I wanted to come up with a recipe for buffalo chicken dip that was healthier and I got the idea to make them into bites, and believe me. These turned out amazing! I hope you enjoy them as much as we did! Ingredients: 4 whole wheat tortillas, cut 2-3″ round circles out with cookie cutter or mason jar lid (I find it helps to warm the tortillas in the microwave for 20 seconds) 2 large chicken breasts, thawed 1/3 cup…

Chicken, Bean, and Veggie Stew
I love a soupy stew on a cold snowy day! This is a perfect snow-day stew. My girls, outside playing in the snow, little feets getting froze, little noses turning from pink to red, cheeks all sorts of rosy, and mittens getting soggy. Kids barging in through the back door demanding warmth and shuffling off their clothes and crawling under warm blankets on the couch. “Mooooommmmm! Can we have some soup and some hot chocolate?” You betcha. Ingredients: 3 large chicken breasts, thawed and diced 3 ribs celery, diced 1/2 cup baby carrots, shredded 1 can black beans, rinsed and drained 1 can chickpeas, rinsed and drained 1…

Buffalo Chicken Stuffed Sweet Potatoes
Adam and Eve. Romeo and Juliet. Beyoncé and Jay-Z. Peanut butter and jelly. Buffalo chicken and sweet potatoes. Ok, so that last pair seemed questionable at first but I thought about all of the things I loved. Chicken. Buffalo wing sauce. Sweet potatoes. It HAD to be good. Well, turns out I have a new favorite way to stuff my sweet potatoes! Inspired by one of the lovely ladies in my current fitness and nutrition accountability group, I had to try my spin on these. So, you can do this one of two ways: Slow-cook the chicken in a little buffalo sauce and ranch seasoning or Bolthouse Farm’s Greek…

Peppermint Mocha Martini (Without the Guilt)
Tis the season. Holiday parties. Booze. Snacks. Booze. Snacks. It’s never ending until January. We’re taking matters into our own hands this year, we hosted our own Christmas party, and the former bartender in me had been dying to stretch my legs and make some yummy drinks. I had two in mind. This one is a good one. I can’t lie. I’m a coffee creamer junkie, and my two favorites are peppermint mocha and gingerbread. I wanted to recreate a similar flavor, in a blended or shaken martini, without the guilt. I’m pretty pleased with the way these turned out. I used a little Shakeology in this peppermint mocha…
