21 Day Fix Extreme Results!!!
I just wrapped my second ever round of 21 Day Fix Extreme on Monday and wow! I loved this program when I used it for competition prep back in February because it gave me shredded results and I loved it again now for that very same reason. There comes a moment when I’m putting together a recipe when I pause and close my eyes and imagine how it’s going to taste when it’s complete. Not too often do they come out EXACTLY as my tastebuds had envisioned but this was one of those recipes that did. By the time 4th of July rolls around, we’re ready for some yummy treats. Summer produce is in abundance and we always have too many strawberries and blueberries in our fridge. In my house, we love peanut butter. Every week, on the grocery list. Peanut Butter. Spoonfuls on spoonfuls, PBJ’s, protein bites, treats, snacks, ants on a log, etc. You know it. We also love chocolate. When we can combine the two, it’s heaven. These healthy, guilt-free snacks are perfect for that afternoon craving, that post-workout protein need, or that late night sweet tooth that won’t quit. Vegetarian Couscous Salad This is a favorite of mine. A yummy, one-dish meal, perfect for an on-the-go lunch, or a light, healthy dinner. Ingredients: For the salad: 1 c whole wheat couscous 1 tsp EVOO 1 medium tomato (chopped) 1 c frozen peas (thawed) 1 can kidney beans rinsed & drained 1/2 tsp parsley 1/4 c low fat Feta cheese For the dressing: 3 tbsp EVOO 2 tbsp red wine vinegar 1 tsp oregano 1/4 tsp sea salt 1 tsp basil Directions: Bring 1 1/4 c water to a boil, add tsp of EVOO and couscous.
