5 Ingredient Taco Stuffed Peppers
No frills. No B.S. 5 simple, clean ingredients, for a simple, clean meal. If you want to add some extra spice to your taco meat, try my made-from-scratch taco seasoning below. Ingredients: 4 medium bell peppers 1 c cooked quinoa 1 lbs lean ground turkey/chicken 1/2 c natural salsa 4 tbsp low fat Mexican shredded cheese Directions: Slice peppers in half, remove seeds. Bake in oven for 10 min at 350*. While peppers are baking, brown ground turkey/chicken in skillet and add salsa. Mix in 1 c cooked quinoa when turkey/salsa mixture is cooked. Ok, so that last pair seemed questionable at first but I thought about all of the things I loved. Chicken. Buffalo wing sauce. Sweet potatoes. It HAD to be good.
