    Summer Sweet Corn Chowder

Harvest is near. Driving home every day we’re surrounded by cornfields and bean fields.  I can see them starting to change.  Corn stalks turning brown.  Bean leaves yellowing after a summer of repeated rain and midwestern sun beating down.  And my heart leaps a little bit because it means my favorite season is approaching. One of my favorite things about fall is food.  Okay, I lied.  I like food in every season.  But I LOVE fall food.  Crockpots. Instapots. Chili simmering on the stove.  Football season food.  The smells of cinnamon and nutmeg and pumpkin pie spice.  I’m drooling just typing this.   With summer is drawing to a close,…

    Perfect Autumn Secret Ingredient Chili

As soon as those leaves start falling, I’m busting out the crockpot and whipping up chili.  But the same chili recipe sometimes gets old and even this chili lovin’ momma needs to switch it up.  My kiddos are decent with eating veggies but I try to pack them in wherever I can.  I added two cups finely minced spinach to this crockpot as well as 1/2 cup of pumpkin too.  Everyone loved it.  I was pleasantly surprised with the reaction- not that I thought they wouldn’t like it, but with the sneaky nutrients I packed in there, there were no complaints!  Here’s the recipe!  Ingredients:  1 lb lean ground turkey…

    Turkey Pumpkin Chili

Sweet & Savory Turkey Pumpkin Chili I don’t know if I’m the only one who cooks like this, but I’ll start thinking up a recipe a week or so before I make it.  I literally let it simmer in my brain.  I think of things I want to add to it, how I want it to taste, what the texture and consistency should be.  Then I get hangry.  I start with the mouthwatering, drooling stuff. And I know I have to make it.  Today I intended to make a chicken butternut squash soup in the crockpot but life got in the way and was saving this chili for the weekend…

We love pancakes almost as much as we love dressing up for Halloween!  With three hungry girls (two of whom were wearing tutus) with a ton of energy starting bright and early at 0630 today, and an anticipated long night of trick or treating, we need a healthy superfoods breakfast to fuel our day!   Anyone else have kids that get pancake syrup all over the kitchen?  I’ve learned to bake it into the pancakes!  Less mess, more flavor!  I hope you enjoy these as much as we do!  And a Happy  Halloween to you and yours!  Ingredients:  1.5 c brown rice flour 1/4 c flaxseed meal 1 scoop vanilla…

    Black Bean Lentil Stew

On Sunday’s we crockpot.  Football, crisp autumn air, crunching in the leaves, wearing scarves, eating soups and stews out of cold weather bowls and getting that warm, fuzzy feeling.   This meal was created by total happenstance.  I wanted a crockpot dinner but didn’t have a plan so I worked with what I had.  And it worked.  My husbands words:  “Oh this is good. It’s not to tomatoey. I like it.” He’s weird about tomatoes.   So it passed the test and now have another crockpot recipe to add to my collection.  This made for a yummy one dish meal and I topped mine with a dollop of low fat…

Pumpkin Puff Cookies (clean and gluten free!)

It’s the most wonderful time of the year. Nope, not Christmas. Fall baking! If you haven’t been paying attention, I’ve busted out the pumpkin.  We needed a cookie recipe. Bad. Something that would satisfy even the sweetest tooth without the guilt.  Enter pumpkin puffs.  These bad boys are so light and fluffy they almost floated away!  I added dark chocolate chips (kid pleaser) and am calling them gluten free because I substituted brown rice flour and they turned out great!  I hope you enjoy them!  Ingredients: 1 1/4 c brown rice flour  1 scoop vanilla Shakeology (or protein powder) 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp sea…

    Pumpkin Spice Coffee Creamer (clean)

Because once September hits, the pumpkin spice is flowing like the Budweiser beers during Cardinals playoffs (another reason why I love this time of year!).   So contrary to my husband who wanted to stick to the artificial stuff, I wanted to recreate that PSL flavor without the added sugar, artificial flavors, or food dyes.   Ingredients: 1 c vanilla unsweetened almond milk 1 tbsp pumpkin purée 1/2 tsp cinnamon 1/4 tsp nutmeg 1 tbsp pure maple syrup  Directions  Combine all ingredients in a small saucepan over low-medium heat whisking lightly until purée has dissolved and milk begins to steam.  Remove from heat and pour into a mason jar or…
