    When you’re trying to eat healthy but you only want tacos and enchiladas.  What do you do? You whip up a clean enchilada mix.  Shove it into some scraped out zucchini top it with a little cheese, bake it, and enjoy!     Hammer and Chisel: 60 Day Results

    Protein Pancakes with Chocolate Peanut Butter Drizzle

    When breakfast tastes like dessert it makes for a happy day.  These protein-packed pancakes make my heart happy.   A total win and a great start to Sunday morning!  Enjoy! Ingredients:  For the Pancakes: 1 cup Kodiak Protein Pancake Mix  1 scoop vanilla Shakeology (optional)  1 c Vanilla unsweetened almond milk  For the Chocolate/Peanut Butter Drizzle:  3 tbsp vanilla unsweetened almond mik 2 tbsp natural chunky peanut butter 1 tbsp chocolate Shakeology (or chocolate protein isolate) Chocolate chips optional 🙂  Directions:  Prepare pancake batter according to package.  Pour onto medium heat griddle into 4-5″ dollops.   In a small bowl, microwave almond milk and peanut butter for approximately 15 seconds.…

    Lentil Stew (Crockpot)

    Fat Tuesday Jambalaya

    The old bartending days.  Down in Soulard.  Oooh I loved working Mardi Gras!  Tons of people.  Lots of tips. Delicious food.  You could count on me scarfing down several bowls of jambalaya during a 12 hour shift!   So tonight being Fat Tuesday, I wanted to recreate the Mardi Gras taste of jambalaya I remembered but with a little bit healthier kick.  We used our jalapeño cheddar elk sausage but you can use a ground turkey, a lean ground sausage, or chicken and it would be just as yummy.  I hope you enjoy!   Laissez les bon temps roulez!  Ingredients:  1 lbs lean sausage or turkey (we used elk) 3…

    Buffalo Chicken Bites (Healthier Version)

    Put out the buffalo chicken beacon and I’ll be the first one there!  And I feel like Super Bowl is one of the best days for all things buffalo chicken.  I wanted to come up with a recipe for buffalo chicken dip that was healthier and I got the idea to make them into bites, and believe me.  These turned out amazing!  I hope you enjoy them as much as we did!     Quinoa Stuffed Mini Peppers

    Easy. Simple. Delicious.   An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack.  This was one of those “come together” moments.  I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born!  Enjoy!  Ingredients:  6-8 mini peppers 2 c steamed chopped kale  1 c cooked quinoa 1/4 c (extra) diced peppers & red onion Feta cheese, optional  Directions: Cook quinoa according to package.  Steam kale until dark green.   Sauté extra diced peppers and onions in skillet with 2 tbsp water.  Slice mini peppers in half, top to bottom.…

    Buffalo Chicken Stuffed Sweet Potatoes

    Adam and Eve.  Romeo and Juliet.  Beyoncé and Jay-Z.  Peanut butter and jelly.  Buffalo chicken and sweet potatoes. Ok, so that last pair seemed questionable at first but I thought about all of the things I loved.  Chicken.
