When I lived in Soulard there was a little coffee shop that made the very best chicken salad.  I lived off that stuff.  Creamy. Nutty. The chicken was cooked perfectly.  I still get warm fuzzies thinking about it.   Today.  Warm fuzzies.  This lunch was hands down one of the best things I’ve made in a long time.  It was simple and delicious.  Creamy, clean, healthy and hit the spot.  Nothing more.  Nothing less.  Just perfection.
