      Ahhhhhh!   That’s a WRAP! 3 weeks of workouts in the bag, nutrition on point, and ready to finish packing these bags, board that airplane, and land on the beaches of Punta Cana tomorrow afternoon.  Vacation mode: ON!!!     When I started Whole 30 I thought, how am I going to make it through on scrambled eggs and grilled chicken.  I need more variety in my life.  Around day 9 of eating mostly scrambled eggs, potatoes, and chicken I new I needed to spice things up or I was going to get bored.  And reach for the chips.  And I’m determined to get through these 30 days with no cheats.  Day 19 & going strong.   So I whipped up a yummy “breakfast” quiche, I say breakfast lightly because this has been my dinner twice this week, it’s so good.  Sweet potato crust, ground turkey, and plenty of veggies. …

    I’m just a girl, standing in front of a stove, asking for dinner to make itself. Fortunately this wasn’t quite as difficult and time consuming as I imagined in my mind it would be. And keeping it simple and CROCKPOT friendly made it that much easier on our busy schedules.     Once that cold air hits and I’m in leggings, boots, and a scarf most days, my cooking shifts to stewy-type meals.   As a momma, I struggle with things that the kids will eat that are flavorful but don’t compromise our healthy eating too.   So I came up with this yummy butternut squash chicken stew and needless to say, everyone was happy.  Nothing like a bowl of hot soup on a cold fall evening!     Taco Stuffed Spaghetti Squash

    Fall is here.  So much squash.  We have been given large amounts of squash several times in the past few weeks and we’re up to our ears in squash.  Fortunately my kids eat spaghetti & meatballs with spaghetti squash (not always, but we made it work the other night).   But I needed something to do with the rest of the spaghetti squash and I thought I’d take my ground turkey, a little salsa, stuff it and bake it.  And it was everything I dreamed it would be and more!  My husband approved.  He’s not a squash eater by any means so it wasn’t easy to come up with something…
