Baked Fajita Taco Tuesday
Every Tuesday needs tacos. Today I needed tacos. Baked fajita tacos. No guilt. Enough flavor to last me until next Tuesday! We made a big batch. Homemade taco seasoning too. The old bartending days. Down in Soulard. Oooh I loved working Mardi Gras! Tons of people. Lots of tips. Delicious food. You could count on me scarfing down several bowls of jambalaya during a 12 hour shift! Put out the buffalo chicken beacon and I’ll be the first one there! And I feel like Super Bowl is one of the best days for all things buffalo chicken. I had the quinoa cooked, I’d already steamed the kale, and I was chopping up peppers when I thought- why don’t we put this together! And this recipe was born! Enjoy!
