    Broccoli Cheddar Stuffed Sweet Potatoes

    I think we all know what’s important in life. Food that you can melt cheese on top of. Tonight, I wanted a dinner that was simple, flavorful, and didn’t require a lot of effort on my part.  Granted this took almost an hour to cook, prep was about 10 minutes tops.  And the melty cheese part, well that’s a bonus.     Buffalo Chicken Lettuce Wrap Tacos

    Ingredients: 4 boneless, skinless chicken breasts, thawed 1/2 c Buffalo Wing Sauce 1/4 c Greek yogurt ranch dressing  Romaine lettuce leaves  Shredded low fat cheese Additional Ranch for topping Directions: In a crockpot, combine chicken, wing sauce, and Greek yogurt ranch. Cook on low 4-6 hours.  Remove chicken and shred.  Place mixture into lettuce leaves.  Top with shredded cheese and additional ranch if desired. Enjoy!

    Perfect Autumn Secret Ingredient Chili

    As soon as those leaves start falling, I’m busting out the crockpot and whipping up chili.  But the same chili recipe sometimes gets old and even this chili lovin’ momma needs to switch it up.  My kiddos are decent with eating veggies but I try to pack them in wherever I can.  I added two cups finely minced spinach to this crockpot as well as 1/2 cup of pumpkin too.  Everyone loved it.  I was pleasantly surprised with the reaction- not that I thought they wouldn’t like it, but with the sneaky nutrients I packed in there, there were no complaints!  Here’s the recipe!  Ingredients:  1 lb lean ground turkey…

    Italian Chicken Stuffed Spaghetti Squash- Low Carb

    Oh sweet baby lord in heaven… I wish  the internet had smell-o-vision… this might just be at the top of things I’ve whipped up that I could eat every day and never get tired of it.     Honey Balsamic Chicken Stir-Fry

    Strawberry Balsamic Chicken Salad

      My favorite salad.  Simple. Clean.  Healthy.  Something about strawberries and balsamic vinegar that makes a delicious combination!   Ingredients: 1 chicken breast, grilled 2 c spinach  1 c diced strawberries 1 tbsp feta cheese  1 tbsp chopped walnuts  2 tsp chia seeds  2 tsp balsamic vinegar  Directions:   Place spinach in bowl.  Add walnuts, feta, diced chicken breast, chia seeds, and strawberries.   Drizzle with balsamic vinegar.   Enjoy!!

    Cauliflower Rice Stir Fry – Whole 30 Approved

    Me on Whole 30:  What else can I cook that’s going to be amazing! THIS! This was my first time with cauliflower rice.  I didn’t know what to expect.  I assumed it wouldn’t taste as amazing as it did and I’m happy to be proven wrong!  And when my husband tries this and says- I’d eat that- I know it’s a success!
