Lentil Stew (Crockpot)
No meat Friday! Lenten season for us. That means no chicken, beef, pork, turkey, etc. Fish is fine. But a husband who isn’t a big fan of seafood, my options can get pretty limited. I’ve been playing around with lentil recipes and this is my new favorite! Husband approved too! I hope you enjoy! Ingredients: 1 cup red lentils 4 c organic vegetable broth 3 celery ribs, diced 1.5 c diced carrots 1/4 c chopped yellow onion 2 garlic cloves, minced 1/2 tsp sea salt 2 tsp oregano 1 bay leaf Black pepper to taste 4 tbsp low fat Greek yogurt (optional) Directions: In a medium crockpot (sprayed with…

The Skin You’re In…
The skin we’re in. Thick. Thin. Pale. Tan. Brown. White. Freckled. Dotted with cellulite. Lined with stretch marks. Wrinkly. Shiny. We’re so quick to judge ourselves on appearances. But how many of us can say that we’re comfortable in that skin. That we’re getting rid of judging, and moving onto acceptance. It’s taken me a lot of years to get to this point. To be comfortable in my body. To love the cellulite and the imperfections and the wrinkles. I didn’t always. So I decided one day to ask for help. I was tired of being tired, being self conscious, and not getting the results I wanted from…

Chocolate Covered Strawberry Shakeology
I don’t know about you, but the week of Valentine’s Day isn’t an easy one if you’re trying to reach your fitness goals. Chocolate everywhere. Jumbo sized chocolate kisses. Boxes upon boxes of chocolates. Chocolate covered chocolate. My head says yes but my skinny jeans say no. So I had to make my own chocolate covered strawberry Shakeology today to combat the candy and cravings surrounding me all week! This turned out just heavenly! I am in LOVE! I hope you enjoy as much as I did! Ingredients: 1/2 scoop Chocolate Shakeology 1/2 scoop Strawberry Shakeology 4 medium strawberries, rinsed and stems cut off 1 cup vanilla unsweetened almond…

Fat Tuesday Jambalaya
The old bartending days. Down in Soulard. Oooh I loved working Mardi Gras! Tons of people. Lots of tips. Delicious food. You could count on me scarfing down several bowls of jambalaya during a 12 hour shift! So tonight being Fat Tuesday, I wanted to recreate the Mardi Gras taste of jambalaya I remembered but with a little bit healthier kick. We used our jalapeño cheddar elk sausage but you can use a ground turkey, a lean ground sausage, or chicken and it would be just as yummy. I hope you enjoy! Laissez les bon temps roulez! Ingredients: 1 lbs lean sausage or turkey (we used elk) 3…

Buffalo Chicken Bites (Healthier Version)
Put out the buffalo chicken beacon and I’ll be the first one there! And I feel like Super Bowl is one of the best days for all things buffalo chicken. I wanted to come up with a recipe for buffalo chicken dip that was healthier and I got the idea to make them into bites, and believe me. These turned out amazing! I hope you enjoy them as much as we did! Ingredients: 4 whole wheat tortillas, cut 2-3″ round circles out with cookie cutter or mason jar lid (I find it helps to warm the tortillas in the microwave for 20 seconds) 2 large chicken breasts, thawed 1/3 cup…

I put my hand upon my chip. When I dip you dip we dip! Happy taco Tuesday! One of my favorite things in the entire world is tacos! And dips. So it only made sense to combine the two! Quinoa Stuffed Mini Peppers
Easy. Simple. Delicious. An all-in-one appetizer, side to accompany dinner, or healthy afternoon snack. This was one of those “come together” moments. Chicken, Bean, and Veggie Stew
I love a soupy stew on a cold snowy day! This is a perfect snow-day stew. My girls, outside playing in the snow, little feets getting froze, little noses turning from pink to red, cheeks all sorts of rosy, and mittens getting soggy. Kids barging in through the back door demanding warmth and shuffling off their clothes and crawling under warm blankets on the couch. “Mooooommmmm! Can we have some soup and some hot chocolate?” You betcha. Ingredients: 3 large chicken breasts, thawed and diced 3 ribs celery, diced 1/2 cup baby carrots, shredded 1 can black beans, rinsed and drained 1 can chickpeas, rinsed and drained 1…

Buffalo Chicken Stuffed Sweet Potatoes
Adam and Eve. Romeo and Juliet. Beyoncé and Jay-Z. Peanut butter and jelly. Buffalo chicken and sweet potatoes. Ok, so that last pair seemed questionable at first but I thought about all of the things I loved. Chicken. Buffalo wing sauce. Sweet potatoes. It HAD to be good. Well, turns out I have a new favorite way to stuff my sweet potatoes! Inspired by one of the lovely ladies in my current fitness and nutrition accountability group, I had to try my spin on these. So, you can do this one of two ways: Slow-cook the chicken in a little buffalo sauce and ranch seasoning or Bolthouse Farm’s Greek…
