Honey Balsamic Chicken Stir-Fry
Tonight’s dinner took 10 minutes start to finish. 1-2 minutes to chop chicken and veggies (we grill a bunch of chicken on Sunday for meal prep during the week). 7 minutes to cook it all in the skillet. 1 minute to plate and serve!
***Cauliflower rice is such a healthy alternative especially if you’re gluten free or following a low carb plan. You can’t even tell the difference! My husband loved it and he doesn’t eat cauliflower!
For the Stir Fry:
2 c chopped chicken (grilled it yesterday- we use it for meal prep!)
1 pkg frozen riced cauliflower
1 large red bell pepper- diced
2 c chopped broccoli (or 1 frozen package)
1 tsp EVOO
For the Sauce:
2 tbsp wildflower honey
1 tbsp balsamic vinegar
1 tsp ground mustard
1/2 tsp garlic powder
2 tsp sesame seeds (for a garnish at the end)
Directions:
Sautée peppers & broccoli in oil for 3-4 minutes. Add chicken and cauliflower. Cook 2-3 more minutes.
Stir all ingredients (except sesame seeds) together. Pour over stir fry. Toss. Serve & enjoy! Top with sesame seeds!
