Texas Caviar- Clean and Simple

We all do it.  We have a BBQ coming up.  We swear we’re going to plan ahead, find some cute/healthy/fun recipe on Pinterest to make and an hour before we go it’s scramble mode to get it together!  
Raiding the pantry and trying to throw something together.  
Fortunately, if you’re like me and have a few things in your pantry and fridge already, this can be a breezy 5 minute recipe!  
We use this as a salad, a side, a dip for tortilla chips, and to top turkey burgers, burritos, tacos, and really anything!  
You can swap out several things but here’s a good base!  
Ingredients
1 can organic black beans, drained & rinsed
1 can organic sweet corn, drained 
1 can Rotel (or tomatoes with green chiles), with juices
1 avocado, diced 
1/2 green (or red/orange) pepper, diced 
2 tbsp red onion, minced
1-2 tbsp finely minced jalapeño (optional)
1 lime, squeezed
1 tsp garlic powder
2-4 tsp chili powder 
2 tbsp chopped fresh cilantro or 2 tsp dried 
Dash Himalayan sea salt
Directions
Mix everything together in a large bowl.  Can swap out fresh tomatoes, a can of green chiles, add in chickpeas or pinto beans too, or green onion!
