Vanilla Protein Granola (with Shakeology)

Saturday mornings are for lounging, for coffee, and for listening to our kids run around and wrestle and giggle.  We absolutely cherish these moments. Moments when we can sit peacefully and sip coffee out of old mugs, each one with a story to tell.  Mine was a gift from coworkers years ago, a time in my life where my job was a big part of my identity, where I lived to work.  I loved those that I worked with and the passion in their eyes truly made my “job” a place I enjoyed to go each day.  My husbands mug was a gift from his 10 year West Point reunion, an incredible weekend celebrating accomplishments and enjoying time with friends and sharing stories of their pasts together.  I don’t know that those were simpler times as our priorities have now changed and raising three little ones is not a simple task but when you love what you do and you love being with your children, it makes things a lot less complicated.

We made today an easy breakfast day.  No need to complicate things.  This recipe is inspired by a good friend of mine who also shares a passion for what she does and lives to create a life of good health, happiness, and simplicity for herself and her family.  This is a perfect granola to eat from one of those old mugs.

Vanilla Protein Granola

Ingredients: 
1/3 c wildflower honey
1/3 c pure maple syrup
1/2 c natural peanut butter
6 c old fashioned oats
2 tbsp flaxseed meal
2 tbsp chia seeds
1 scoop vanilla Shakeology (optional) 
Directions: 
Preheat oven to 325*.  Mix honey, syrup, and peanut butter in a bowl until combined and smooth.  In a separate bowl, combine dry ingredients and mix well.  Add wet ingredients to dry and stir until dry ingredients are coated.  Spread mixture evenly onto two cookie sheets sprayed lightly with EVOO spray. Bake for 8-10 minutes.  Stir/turn granola in pans.  Rotate then place in oven for an additional 8-10 minutes.  Let cool for 15 minutes.  Granola will be crunchy.  Serve dry or with coconut/almond milk and fresh fruit in an old mug!  Enjoy!
